Ammonium chloride / salmiak
salmiak, NH4Cl- inorganic chemical compound, salt of hydrochloric acid and ammonia. Under normal conditions, ammonium chloride occurs as a white powder or colourless, crystalline solid. It dissolves well in water (at 20 degrees Celsius 370 grams per litre). When heated, it sublimates, ammonium chloride vapours dissociate to ammonia and hydrogen chloride. It occurs naturally as a rare mineral - native salmiak.
Ammonium chloride is used primarily as an electrolyte in dry Leclanché cells, the most commonly used galvanic cells today. It has applications in metallurgy for the recovery of precious metals, and as a conductive salt in electrolytes for nickel plating and zinc plating. It is also used as an expectorant, a cattle feed additive, a shampoo ingredient and is also found as an additive in some fertilisers.
Ammonium chloride is used in the production of powdered milk and condensed milk, unprocessed fish products and ripened and sliced cheeses. It is also used in fruit compotes and canned and glass container fruit. It is also used in food products as an E510 raising agent and preservative. Ammonium chloride is also an acidity regulator, flavouring agent and yeast conditioner in fermented products such as bread.
