The name “flavonoids” is derived from the Latin term flavus, associated with the color yellow. Historically, it referred to colored plant compounds; however, the flavonoid group includes substances with various optical properties, including colorless, yellow, red, pink, blue and dark violet compounds. Their color depends on the specific chemical structure, oxidation state, type of substituents and the arrangement of conjugated bonds within the molecule.

Flavonoids belong to the major groups of plant secondary metabolites. Their basic structure consists of two aromatic rings connected by a three-carbon fragment, known as the C6-C3-C6 system. Differences in the structure of the central ring, the number and position of hydroxyl groups, the presence of methoxy substituents, oxidation state and attachment of sugar residues lead to the formation of many structural classes. The most commonly distinguished subgroups include flavones, flavonols, flavanones, flavanols, isoflavones, anthocyanins and chalcones.

In plants, flavonoids are associated with responses to environmental factors and protective functions. They participate in protection against UV radiation, oxidative stress and selected biotic factors. Some compounds from this group also influence the coloration of flowers, fruits and other plant tissues, which is important for plant interactions with the environment.

The research significance of flavonoids is mainly related to their phenolic structure. The presence of hydroxyl groups and conjugated systems affects the ability of these compounds to participate in redox reactions, stabilize radical forms and interact with metal ions. For this reason, flavonoids are often used as materials in studies on the relationship between molecular structure and chemical or biological properties.

In biological analyses, it is important to distinguish between properties observed under in vitro conditions and the behavior of flavonoids in living systems. Their biological availability depends on their chemical form, especially the presence of sugar residues, as well as on metabolic transformations occurring in the digestive tract, liver and intestinal microbiota. For this reason, flavonoids are particularly useful in phytochemical, analytical and biochemical studies involving the structure, metabolism and properties of polyphenolic compounds.
