The name “flavonoids” is derived from the Latin term flavus, associated with the color yellow. Historically, it referred to colored plant compounds; however, the flavonoid group includes substances with various optical properties, including colorless, yellow, red, pink, blue and dark violet compounds. Their color depends on the specific chemical structure, oxidation state, type of substituents and the arrangement of conjugated bonds within the molecule.
Flavonoids belong to the major groups of plant secondary metabolites. Their basic structure consists of two aromatic rings connected by a three-carbon fragment, known as the C6-C3-C6 system. Differences in the structure of the central ring, the number and position of hydroxyl groups, the presence of methoxy substituents, oxidation state and attachment of sugar residues lead to the formation of many structural classes.
